Spicy Chicken and Black Bean Salad


3 oz baked boneless, skinless chicken breast seasoned with garlic and herb and southwest chipotle seasoning (Mrs. Dash)

1 cup baby spinach
5 grape tomatoes, chopped
1/8 cup yellow pepper, chopped
1/4 cup canned black beans


1/2 Tbsp fat free sour cream
1/2 Tbsp red pepper hummus
1/2 Tbsp salsa
Fiesta Lime Mrs. Dash


Nutritional Facts:

222 calories

29.6 g protein

18.4 g carbohydrates

3.2 g fat

54/33/13 (protein/carb/fat ratio)

This is a good recipe option that follows the P90X Phase 1 Fat Shredder Phase.  This can be a good option for lunch or dinner or even a snack.  You could double up this recipe for a larger lunch option if you are needing more calories.

This recipe is for one serving.  Please keep in mind that different brands of foods may have different nutritional stats.  It is important to track your food intake to make sure you are on track for your calorie and ratio goals.



instead of the sour cream, another option is non-fat plain greek yogurt. i think that provides more protein than the sour cream.


That would be great also. We loved bacon and will still have a couple pieces of turkey bacon once a week.

awesome!!!! keep it up would love some more recipies. If everyone is like me and my wife, seems like we eat the same thing over and over and need a change up.
