Here is a delicious White Bean Chicken Chili Recipe that will make your mouth water!  This tastes so good and you can make big batches of it to eat throughout the week.

White Bean Chicken Chili Recipe

Melinda and Tekoa’s White Bean Chicken Chili Recipe

2 – 16oz boxes organic, free range, low sodium Chicken Broth
2 White Onions, coarsely chopped
1 Green Bell Pepper, coarsely chopped
1 Red Bell Pepper, coarsely chopped
2 cans organic, no sodium added White Beans, drained and rinsed
2 cans no sodium added, diced Fire Roasted Tomatoes with Garlic
2 cooked, boneless, skinless Chicken Breasts, shredded (for a fast option, use a rotisserie chicken)
1/2 tsp Pink Himalayan Salt
1 tsp Ground Cumin
2 tsp Smoked Paprika

It really is as simple as combining all the ingredients into a large pot and letting it simmer together until the peppers and onions are soft. Serve and enjoy!

Additional Options:
– 1/2 cup low fat, shredded Colby Cheese added to the whole pot
– Dollop of fat free Sour Cream per bowl
